“El aceite de oliva es armero, relojero y curandero” “Olive oil is a gunsmith, a watchmaker and a healer”
Hi there,
The other day we were having parsnip soup for dinner and I needed something else to make it more of a meal. My knee jerk reaction was to make a salad. But, it was a cold day and I wanted only warmth. My initial thought was to making a frittata. But after reading Darlene Foster’s post, http://darlenefoster.wordpress.com, my thoughts wandered over to sunny Spain and a Spanish tortilla. We had the good fortune years ago to spend some time in Barcelano. I remember with a great deal of pleasure stopping in the la barra for tapas. One of the tapas staples were little bites of Spanish Tortilla. Again, in an effort to make a recipe a “smidge healthier”, I removed the addition of the jamon and substituted sweet potatoes for the white.
Dom and I enjoyed our multicultural dinner and walked down memory lane reliving the Gaudi Museum, the walks down the La Rambla, and drinks and tapas at the Cantinas.
SPANISH TORTILLA – say Ole to sweet potatoes.

Sounds delicious. My husband makes a mean tortilla, too, but his is different every time. I think I’ll suggest sweet potatoes next time he makes it.
That is what is so great about a tortilla – it’s versatility. Have a great week Viv and thanks for stopping by.
Great idea! And I love sweet potatoes…
Dom does also and because of that, I have become a little more creative. Thanks Mimi.
So pretty Bernie! It looks like a party in itself! I love that you used the sweet potatoes here, and I’m just wondering if you have any leftover…
Sorry Dot, I was lucky to get the pictures. One of these days though….
Thanks for the mention. A Spanish Tortilla is my backup whenever I don’t know what to make for dinner. It is so versatile and fulfilling. I have never thought of making it with sweet potatoes so that’s what it will be next time. It is great in a sandwich the next day.
I never thought of the sandwich idea but now I will. Thanks, Darlene.
Sounds delicious! I especially like the appetizer presentation. I recognize most of the garnishes, but what is the pink-colored accoutrements?
Hi Terrie, they are small pieces of barely cooked salmon. I had it in the refrigerator.
Ah, nice touch!
I love Spanish tortillas and haven’t made one in a really long while. Yours looks so inviting and moreish, Bernadette.
Thanks Angie. It is a good recipe to have up your sleeve because of its versatility.
Yummy and a beautiful presentation too. 🙂
Thanks so much Jeanne. This is highly appreciated praise coming from such an accomplished cook as yourself. How are your eyes?
You are very welcome.
At the moment, they are still the same. I go in for my cataract surgeries in march. I have one on 3/17 and the other one on 3/24. Thank you.
I appreciate recipes that use sweet potatoes, this looks wonderfully delicious.
Thanks so much. I have been substiuting sweet potatoes very successfully recently.
Looks good. I love how food takes you down memory lane…
Thanks Jo, I know for me music and food are two biggest memory nudges.

what a great idea to use sweet potatoes. i am trying to use them more in my cooking lately.
Thanks Sherry. I have been using them as a substitution a lot lately and I am very pleased at how well they work in recipes.
Yum! That sounds delicious. Definitely a much better choice than a salad on a cold winter’s day! 😀
Thanks Donna. As much as I like a good salad, that week was horribly cold.
Oh Yum!!! Sounds perfect
Thanks Antionette. It really hit the spot during that cold snap.
These look so pretty and using sweet potatoes that I love and hubby doesn’t may just be the ideal way to convert him as he loves tortilla… 😊
Thanks Carol. This might just turn the corner for him. It doesn’t have an overly sweet taste.
Yes I think so too he is not overly adventurous and likes what he knows but does admit when I can sneak something in that it is ok …lol
Very inventive Bernadette, I’ve never had a Spanish tortilla, sounds wonderful!
What a fascinating recipe Bernadette! I have never heard of manchego cheese!
So pretty! Great idea! 😉
This sounds delicious. I’ll have to make it this weekend.
I hope you enjoy and send a photo if you find the time to make it. Thanks!
