Welcome to the Holiday Edition of New Classic Recipe. For the next two months, I will be sharing recipes and stories celebrating Thanksgiving, Hanukkah and Christmas. “This recipe comes to me from Jane and Jim Evans. They are a longtime Haddonfield couple who are talented in so many ways. They were avid antique collectors and tennis players.
We had the pleasure of several Thanksgiving dinners together and the food was terrific. They are still active seniors and enjoying their grandchildren.
My family enjoys this as a side with our dinner, as a dessert and sometimes the next morning for breakfast!”
Cranberry Apple Crisp
Simple and just the right amount of tart and sweet.
3 cups of peeled Granny Smith apple slices
1 and 1/2 cups of fresh cranberries
1/2 cup sugar
1 tsp cinnamon
1/4 cup unsalted butter, softened
1/2 cup all purpose flour
1/2 cup brown sugar( packed)
Preheat oven to 350
Butter a 1 quart casserole
Mix apples with cranberries and sugar and cinnamon
Sprinkle with 1 tsp lemon juice
Mix butter, flour and brown sugar
Sprinkle over top of apple, cranberry mix and bake.
Most times I double this recipe and place in a larger pan
