Giambotta with sausage and chicken – a pot full of delicious

Hi there,

I have been in “clean out the freezer” mode these past few weeks. I have gotten into the habit of pandemic buying. You know, “I better buy this because it might not be here next time”. I had some chicken and some sausage to defrost and made Giambotta, a dish I haven’t made in some time. You should have seen the smile on Dom’s face when I told him what was on the menu for dinner.

Giambotta “is a member of that hard-to-define category of Italian foods known as minestre, generally somewhere between a thick soup and a stew.  It is part of the broader family of western Mediterranean vegetable stews. Dom said that when he was a boy it was often served at religious festivals and weddings.

GIAMBOTTA

Ingredients:

  • 1 lb of Italian sausage cut into bite sized pieces (I used hot sausage)
  • 1 lb of boneless, skinless chicken breast cut into bite sized pieces
  • 1 dozen small, new potatoes, quartered
  • 1 onion roughly sliced
  • 1 small fennel bulb sliced
  • 2 cans of chopped tomatoes
  • 1 jar of Dellalo peppers in sauce (I used medium heat)
  • 1 heaping teaspoon of Calabrian chili paste
  • 1 small box of button mushrooms
  • 1 small eggplant
  • !/4 cup EVOO

Directions:

  1. In a dutch oven or slow cooker heat the olive oil
  2. Saute all the vegetables until lightly browned
  3. remove vegetables from the pot and sauce the sausage until almost cooked through
  4. add the chicken pieces add sauce for about 5 minutes
  5. return the vegetables to the pot
  6. Add the 2 cans of chopped tomatoes along with the Calabrian chili paste
  7. Cook for an additional 10 minutes
  8. Add the Dellalo peppers
  9. If using a slow cooker, cook on low for 4 hours
  10. if using a dutch oven, reduce your flame to low and cook an diction 2 hours
  11. Season with salt and pepper and serve with good crusty Italian bread

Special Note: This dish is very versatile. If you don’t like one of the vegetables leave it out and use one that more suits your taste. I think I will add carrots when I make it again in the fall. Also, it can be made as a strictly vegetarian meal but I would add more seasonings if just using vegetables.

  1. What a treat for Dom! This recipe has everything we love and it makes me hungry for fall to arrive. May I ask, where do you get your Calabrian chile paste? I use the Bomba from Trader Joe’s and wonder if it is the same thing.

    • I have never bought this product from Trader Joe’s. I bought it from Dellalo Foods. Although they sell their products in the supermarket, I could only by this on line. I love the new picture. I am so happy you are showing your pretty face.💕

With a family that includes nut, peanut, tree fruit, and vegetable allergies, gluten intolerance, dairy intolerance, vegetarians, vegans, heart conscious, and a couple of picky eaters, there has to be a few quick tricks in the book to keep everyone fed and happy! Personally, I do not eat red meat or most full-fat dairy (usually) for health reasons, making the occasional exception at Thanksgiving and Christmas or our anniversary if the duck is locally raised. I do eat fish and seafood, so I try to come up with alternatives and substitutions when available. I serve local organic eggs and cheeses to my family who can tolerate dairy (My husband recently had a heart attack, and I need to watch my own cholesterol so I am careful, but have been known to let a little piece of really good cheese accidentally fall on my plate!). I believe strongly that eating in a way that is good for our planet is also good for our bodies, and I try to educated myself about our food sources! I cook by the seasons and draw on inspiration from the strong and talented women in my family who came before me, as well as the youth in the family who look at the world with fresh eyes. Food links us all, whether sharing a meal, cooking it together, or writing about it for others to enjoy. I love taking an old recipe and giving it a modern spin, especially if I can make it a littler healthier and use foods that are kinder to the Earth and to our bodies. I believe strongly in sustainable, delicious eating of whole foods, and the wonderful flavors we have at our fingertips! And finally, I love conversing with all the talented cooks and chefs out there who dot the globe! It's a wonderful, world full of culinary pen pals, and I cherish them all! XXXOOO Dorothy
