Caroline’s Crack Dip – so good it should be illegal

For some people the meal itself is a long delay between the appetizer and the dessert.
Gertrude Berg

Hi there,

I have to be truthful, the above quote is how I feel about dinner in restaurants a lot of the time. I am all in when it comes to appetizers and desserts. Thank you very much, and can we skip the main course, please?

The following recipe was given to me by my friend, Fran. Her daughter Caroline makes this sinfully delicious appetizer. When I visited Fran, I proceeded to eat the amazing avocado combination. So by the time I reached the restaurant I had very little room for dinner. But, I didn’t care because I knew I had already eaten the best part of the meal. Thank you Caroline!

CAROLINE’S CRACK DIP

Ingredients:

2 whole plum tomatoes chopped
¼ cup onion chopped fine
1 bunch fresh parsley chopped very fine
1 clove garlic minced
½ tsp oregano
1 Tbsp olive oil
2 Tbsp red wine vinegar
4 oz plain crumbled feta cheese
¼ tsp salt and pepper to taste
2 whole avocados chopped in chunk

Instructions:
In a bowl combine all ingredients except the avocados.
Stir to combine.
Cover and refrigerate for several hours or overnight.
Before serving add in avocados and stir.
Serve with tortilla chips.

I think this would be a fabulous addition to the last blast of summer Labor Day picnic.

Talk soon, ❤️💕 Bernadette

      • No, I don’t use any cheese…I just do basically guacamole with avocado, onion, garlic and cherry tomatoes…I go for a simpler version but I’m sure adding feta will be a great addition!

For me, it’s multiple appetizers, no desserts! This looks fun and tasty. And filling!

Thanks Bernadette, I will be doing that during football season when we have a lot of gatherings to watch games and always have an array of tasty apps!

  3. I see this apple did not fall far from the tree. Caroline is taking after her mom Fran with great recipes. This sounds tasty, light and perfect for summer. I will definitely try it while Jersey tomatoes are still available. I can actually see myself eating this as a salad over fresh greens! Thank you Caroline for creating it, Fran for sharing it with Bern, and Bern for sharing it with us!

That sounds absolutely delicious. As my appetite wanes with passing years, I find a healthy appetizer might be all I need. This would do.

Time Traveler of Life – Where my Motor Home is! – Biography Creating worlds, characters, and wielding power like a madwoman, making my characters happy, sad, angry, and some of them with no redeeming qualities. I probably shouldn’t admit this, but I sometimes laugh out loud when I am writing a scene, and I have been known to cry when one of my favorites has to die. I am a left-handed Gemini, what do you expect? Reading bedtime stories to my two children until they fell asleep or until they just told me to go away, was fun. Making up wild stories for my grandchild, and creating Halloween costumes from Cowboys to a Dragon, was another favorite thing to do. I missed that so much when they were grown, that I started writing. My yearly newsletters frequently were drafted third-person by my Love Birds, Miranda our motorhome, and by Sir Fit the White Knight, our faithful Honda. Throughout the years, some of my creative talents centered around writing letters of complaint expressing my displeasure with services or products. One crucial, at least to my Son, was a note to our local school bus driver petitioning her to allow him back on the bus. He was kicked off for making an obscene gesture at his buddy. I reminded her that it was not directed at her, and that “obscenity can be in the eye of the beholder,” kids use that gesture as a greeting. He rode the bus until he graduated. I loved driving my English teacher crazy. Leaving a “continued next week” at the end of my five handwritten pages required each week. He was one of many people that suggested I “do something about my writing.” I graduated from the School of Hard Knocks at the top of my class. After 30 years, in the trenches as a Real Estate Professional, I have found that truth is stranger than fiction. My books are filled with characters I met in that profession. Their names were changed to protect the guilty. Others were from people we met traveling around the country in Miranda, our Motorhome. I am married nearly 60 years to the love of my life, Shirl, and partner-produced two exceptionally talented children, and one grandchild who is our pride and joy.

I, again stole this recipe, and will try it sometime when we have company. Thanks, and we probably won’t be able to eat lunch or dinner after indulging. But our tummies will be happy.

This sounds wonderful, Bernadette. I’m with you in thinking that sometimes the appetizers are the best part of a meal. Ha ha. Thanks for sharing Caroline’s recipe. 🙂

  8. Yum! You called this sinfully delicious, but it looks heavenly to me. Too many dips (including most of my own, unfortunately) are addictive because they are heavy with cream, cheese and mayonnaise. This one covers all the cravings, but still so health conscious. I want some! 🙂

    • If you make it, you will understand why I couldn’t eat dinner. I guess I am old fashioned enough to think anything good is sinful. Old Catholic habit.

Grazie
