Hi there,
I have to be truthful, the above quote is how I feel about dinner in restaurants a lot of the time. I am all in when it comes to appetizers and desserts. Thank you very much, and can we skip the main course, please?
The following recipe was given to me by my friend, Fran. Her daughter Caroline makes this sinfully delicious appetizer. When I visited Fran, I proceeded to eat the amazing avocado combination. So by the time I reached the restaurant I had very little room for dinner. But, I didn’t care because I knew I had already eaten the best part of the meal. Thank you Caroline!
CAROLINE’S CRACK DIP
Ingredients:
2 whole plum tomatoes chopped
¼ cup onion chopped fine
1 bunch fresh parsley chopped very fine
1 clove garlic minced
½ tsp oregano
1 Tbsp olive oil
2 Tbsp red wine vinegar
4 oz plain crumbled feta cheese
¼ tsp salt and pepper to taste
2 whole avocados chopped in chunk
Instructions:
In a bowl combine all ingredients except the avocados.
Stir to combine.
Cover and refrigerate for several hours or overnight.
Before serving add in avocados and stir.
Serve with tortilla chips.
I think this would be a fabulous addition to the last blast of summer Labor Day picnic.

I do a very similar dip just without feta and I simply love it 😋😋 But also feta is a great addition 😋
Do you use another type of cheese? What other ingredients are different?
No, I don’t use any cheese…I just do basically guacamole with avocado, onion, garlic and cherry tomatoes…I go for a simpler version but I’m sure adding feta will be a great addition!

I see this apple did not fall far from the tree. Caroline is taking after her mom Fran with great recipes. This sounds tasty, light and perfect for summer. I will definitely try it while Jersey tomatoes are still available. I can actually see myself eating this as a salad over fresh greens! That sounds absolutely delicious. As my appetite wanes with passing years, I find a healthy appetizer might be all I need. This would do.

Yum! You called this sinfully delicious, but it looks heavenly to me. Too many dips (including most of my own, unfortunately) are addictive because they are heavy with cream, cheese and mayonnaise. This one covers all the cravings, but still so health conscious. I want some! 🙂
If you make it, you will understand why I couldn’t eat dinner. I guess I am old fashioned enough to think anything good is sinful. Old Catholic habit.
